Start the meal choosing from 20 to 25 varieties of jet-fresh oysters with champagne or white wine and then move on to dishes like the Mediterranean seafood medley, the 14-hour slow-cooked crispy pork belly and US scallops and the half Boston lobster. When it comes to the mains, chef Oscar Chow has mouth-watering dishes such as steamed Boston lobster with champagne cream foam, grilled king prawn seasoned with butter and herbs, sous vide pork belly with vignole, Swiss char, French beans and seared foie gras.
